I’ve told you about MoNa Restaurant before, the rather discreet dining spot tucked away inside MoNa Residence on rue des Giroflées. You can read my original article HERE.

At the time, I shared just how much I had fallen for its Mediterranean-inspired menu, as well as its elegant, intimate and wonderfully inviting décor. By now, I imagine many of you have discovered it for yourselves.

Well, I have some exciting news! The décor remains unchanged, but MoNa Restaurant is reinventing what happens on the plate. The fixed menu is making way for L’Atelier des Saisons, a new concept that lets nature take the lead.

In the kitchen, Chef Tristan Romain has made a bold and rather irresistible choice: every week, he creates three starters, three main courses and three desserts, guided entirely by what arrives fresh from the market. Sun-ripened vegetables, fragrant herbs, the catch of the day and the finest cuts from the butcher… the menu quite literally moves with the seasons.

What I love about the chef’s philosophy is that the menu no longer dictates what is bought; the ingredients do. Nature decides, the kitchen responds, and the result is honest, beautifully judged food with no unnecessary fuss each ingredient allowed to shine for exactly what it is.

To complete the experience, Head Sommelier Julien Gonzalez curates a new selection of pairings each week to complement the chef’s creations. It might be an exceptional wine, a bottle from a little-known producer or even a signature cocktail when something more daring is called for. An elegant way to carry the experience through to the very last sip.

You never quite know what will be waiting for you when you walk through the door—and that is precisely what makes every visit unique. I think bistronomy has officially arrived in the Principality!
