The first time I tasted Peruvian cuisine, it was in Madrid at Astrid y Gaston. I discovered ceviches and plenty of incredible flavors. So when I knew that a Peruvian restaurant was settling in the Principality, I was very eager to set foot there! It’s done ! And it’s not just an ordinary restaurant, it’s COYA Monte Carlo, from the award-winning Latin American restaurant group COYA.

The very last of the Principality: it opened at the Grand Prix and since then it is full all the time! Upon my arrival, I was impressed by the entrance of the place. For sure it is a “wow” effect, to the end of the restaurant. COYA is not only a contemporary Peruvian cuisine but also a unique experience to discover the Peruvian culinary art.

I advise you to reserve your table in front of the Ceviche bar or on the terrace, the view is just incredible. An aperitif at the Pisco bar is a must: their cocktails are surprising! A Pisco Sour, a Peruvian classic or a cocktail signed COYA, Aji Margarita made of tequila infused with aji amarillo and jalapeno mix of agave syrup, lime juice, all mounted with a home made purée of green apples and avocados. Without forgetting the guacamole prepared in front of you… a real delight!

By the kitchen, Chef Sanjay Dwivedi combines traditional ingredients from Peruvian cuisine with modern European techniques and Asian influences to create naturally light and healthy dishes. I feasted with the “favoritos of COYA”, a tasting dish that I recommend for all lovers of fish and marinated meats.

 

On the decor side, SAGRADA, a design studio in London, has signed the decoration, like that of all COYA restaurants in the world: a mix of Peruvian historical objects, mirrors, typical fabrics, handmade furnitures and many plants. The open kitchen is at the center of the action and invites to follow the dishes preparation. Simply TOP.
